Your Café Glacé gourmet ice cream cake will arrive frozen and packed with dry ice. You must be available to receive your package, and it is best if you do so in a place where you have a freezer. If you do not have a freezer immediately available, do not unpack the cake. Leaving the foam shipping carton closed will maintain freezing temperatures and protect the integrity of your cake. As soon as possible, get your cake to a quality freezer that is in good working order.

When you are ready to unpack your cake, do so carefully. Open the foam container and gently remove the cake box. Leave the cake in the box, and store it in the freezer. The cake will keep up to one month in a quality freezer, but if you plan to hold it for longer than a week before serving, wrap the cake box in plastic wrap to help prevent humidity and freezer burn.

Underneath the cake will be a block of dry ice in a plastic bag. Be aware, dry ice is extremely cold and can burn you. Using a kitchen towel or oven mitt, remove the dry ice from the foam container and place it outside in a closed trash container to allow it to evaporate.

When you are ready to cut and serve your gourmet ice cream cake remove it from the freezer approximately ten minutes before you plan to cut it to let the cake soften a bit. Cut the cake with a sharp chef's knife, wiping the knife clean between each cut. Our cakes serve between twelve and sixteen people. We suggest that you cut the cake in quarters first and then cut each quarter in either three or four pieces. Replace the part of the cake, if any, that you will not be serving in the freezer and keep for future use. It is best to keep the unused portion uncut, as this will extend how long the cake will keep.
